Schokoladen Zucchini Kuchen
There’s something incredibly satisfying about a moist, rich chocolate cake, and even more so when it’s secretly packed with a healthy vegetable! My Schokoladen Zucchini Kuchen is just that – a decadent treat that bakes up beautifully tender and flavourful, thanks to the humble zucchini. Don’t let the idea of zucchini in a cake put you off; when grated and baked, it virtually disappears, leaving behind only its moisture and a wonderfully soft crum extractb. This recipe is perfect for using up those garden-fresh zucchinis or simply for enjoying a truly delightful chocolate experience.
This cake is deceptively simple to make and the result is consistently impressive. It’s the kind of cake that’s perfect for a coffee break, a potluck, or even just a comforting dessert after dinner. The combination of intense chocolate flavour with the subtle sweetness makes it irresistible.

Cooking Instructions:
Prepare the Wet Ingredients and Grate the Zucchini
The first step to creating our delicious Schokoladen Zucchini Kuchen is to get our wet ingredients ready and prepare the star vegetable. In a large mixing bowl, whisk together the single egg. Add the brown sugar and white sugar to the bowl with the egg. Beat them together until the mixture is well combined and slightly lighter in colour. Next, pour in the rapseed oil and stir until everything is smoothly incorporated. Add the teaspoon of vanilla paste for that classic comforting aroma. Now, let’s prepare the zucchini. Wash your zucchini thoroughly. Using a box grater, grate the zucchini. You can use the medium or fine side of the grater, depending on your preference. I find the medium side works perfectly, as it breaks down the zucchini well without making it watery. Once grated, you don’t need to squeeze out the liquid; it’s exactly what we want for moisture in our cake.
Combine the Dry Ingredients
In a separate medium-sized bowl, we’ll combine all of our dry ingredients. This ensures that the leavening agents and flavourings are evenly distributed throughout the batter. Measure out your 300 grams of all-purpose flour. Add the 70 grams of unsweetened cocoa powder. It’s a good idea to sift the cocoa powder to prevent any lumps from forming in your batter. Next, add 1 teaspoon of baking soda and 1 teaspoon of baking powder. These two work together to give the cake its lift and tender crum extractb. Finally, add a pinch of salt. The salt is crucial as it enhances all the other flavours, especially the chocolate, and balances the sweetness. Whisk all these dry ingredients together until they are thoroughly combined.
Combine Wet and Dry Ingredients and Add Zucchini
Now it’s time to bring our wet and dry mixtures together. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or with a spatula until just combined. Be careful not to overmix the batter at this stage, as overmixing can lead to a tough cake. Once the flour is almost fully incorporated, gently fold in the grated zucchini. The batter will be quite thick at this point, which is exactly what we want. If, however, your zucchini was particularly dry and the batter seems excessively thick, you can add a tablespoon or two of water, but usually, the moisture from the zucchini is enough. Gently stir until the zucchini is evenly distributed throughout the batter. The batter should still be thick but spreadable.
Bake and Prepare the Ganache
Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Grease and flour a loaf pan or a round cake pan. I prefer a loaf pan for this recipe, as it bakes up beautifully. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for approximately 45-55 minutes, or until a wooden skewer inserted into the centre of the cake comes out clean. While the cake is baking, let’s prepare a simple yet decadent chocolate ganache to drizzle over the top. In a small saucepan, melt the 3 tablespoons of butter over low heat. Once melted, whisk in the 1.5 tablespoons of cocoa powder until smooth. Add the 100 grams of chocolate chips or chocolate drops. Stir continuously until the chocolate is fully melted and the mixture is smooth and glossy. This ganache will add an extra layer of rich chocolate flavour and a beautiful sheen to our cake.
Cool and Enjoy
Once the cake is baked, remove it from the oven and let it cool in the pan for about 10-15 minutes. This allows the cake to firm up slightly before you attempt to remove it. After the initial cooling period, carefully invert the cake onto a wire rack to cool completely. It’s important to let the cake cool completely before applying the ganache, otherwise, the ganache will just melt and run off. Once the cake is completely cool, gently pour or drizzle the warm chocolate ganache over the top. You can use a spoon to spread it evenly or let it drip down the sides for a more rustic look. Allow the ganache to set slightly before slicing. This Schokoladen Zucchini Kuchen is best enjoyed at room temperature. It’s delicious on its own, or perhaps with a dollop of whipped cream or a scoop of vanilla ice cream. The texture is incredibly moist and the chocolate flavour is deep and satisfying. Enjoy every bite!
